Crispy Spiced Pork Fillet & Rice

Ingredients

  • 500g pork fillet, thinly sliced for quick cooking
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • Oil for pan-frying
  • Cooked white rice (consider using quick-cook or pre-cooked rice)
  • Pre-cut stir-fry vegetable mix (to save on prep time)
  • Store-bought sauce (such as sweet and sour or your preferred Asian sauce)
  • Optional garnishes: chopped green onions or cilantro, sesame seeds

Method

Season the flour with salt, pepper, and garlic powder on a plate.

Beat the eggs in a shallow bowl.

Coat the pork slices first in egg and then in the seasoned flour.

Heat a few tablespoons of oil in a large skillet over medium-high heat.

Fry the pork in batches until golden and crisp, about 2-3 minutes per side. Remove and set aside on a paper towel-lined plate.

Wipe the skillet clean, add more oil, and toss in the stir-fry vegetables. Cook for about 2-3 minutes until slightly softened but still crunchy.

Return the pork to the skillet with the vegetables, lower the heat to medium, and pour in the sauce. Toss to combine until everything is heated through.

Serve the pork and vegetables over rice. Garnish with green onions, cilantro, and sesame seeds if desired.
