A traditional classic loved by all. The rich pork mince carries the flavours of the curry spices extremely well and the flavour of the curried mince gets better and more pronounced the next day, so make sure you make enough!
Sauce finely chopped onion and crushed garlic in a little oil with a cinnamon stick, curry powder, chilli flakes, ground coriander and cumin until fragrant. Add minced pork and sauce until cooked. Add chopped tomatoes and a little meat stock. Season to taste with salt, pepper, and a pinch of sugar. Simmer gently for 10 minutes until slightly reduced before adding fruit chutney to taste. Simmer until thick and flavourful.
