The silky stroganoff

Sauteed tender pork fillet, smothered in a rich gravy of mustard, sour cream and mushrooms and served over silky tagliatelle. A family favourite that’s ready to eat in 30 minutes. Slice pork fillets into strips and season with salt, pepper and a little mustard powder before the meat is seared in a mixture of butter and olive oil. Remove the browned pork from the saucepan and sweat chopped onion, garlic and mushrooms in the same saucepan. Sprinkle the vegetables with a little flour and cook, while stirring, for 1 minute. Add meat stock, sour cream and mustard and bring to the boil before adding the pork fillet back to the saucepan. Simmer gently for 10 minutes, stirring occasionally. Season to taste and serve over tagliatelle.
