Rich, thick meat sauce with a beautiful depth of flavour cooked low and slow and served on spaghetti, topped with a generous helping of freshly grated parmesan.
Gently sauté finely chopped onion and celery and finely grated carrot in olive oil with salt and pepper until soft and fragrant. Add minced pork and a dash of Worcestershire sauce and sauté until the meat is cooked. Add tomato paste, chopped tomatoes, a little water or stock, fresh oregano, and season to taste. Simmer gently for about 2 hours until rich and flavourful.
