Ingredients

  • 8 slices of streaky bacon, fat trimmed
  • 1 Tbsp + extra for serving pure maple syrup
  • 4 fruitless hot cross buns, split in half
  • 1 tsp extra virgin olive oil
  • Fresh ground black pepper, to taste
  • Butter, for toasting

Method

Heat a drizzle of extra virgin olive oil in a large frying pan over medium heat.

Add the bacon slices and cook for 6-8 minutes or until your desired level of crispness.

In the last minute of cooking, drizzle 1 tablespoon of maple syrup over the bacon, tossing to coat evenly until it becomes sticky and caramelized. Season with fresh ground black pepper for a slight kick.

Meanwhile, lightly butter the cut sides of the hot cross buns and toast them until golden brown, either in a separate pan or in a toaster.

Assemble the sandwiches by placing the caramelized bacon on the bottom halves of the buns. Drizzle with a little extra maple syrup if you like.

Top with the other halves of the hot cross buns and press down gently.

Serve immediately while warm.
