Festive apple, cherry & brandy Gammon roast

This Show Stopping Christmas Gammon will make entertaining a breeze this season. It is baked with a rich portion of brandy & sweet cherry jam that’s sticky and aromatic, guaranteeing a feast for the senses.

Festive apple, cherry & brandy baked Gammon

Ingredients

  • Olive oil
  • 1 large gammon
  • 3-4 Pink lady or royal gala apples sliced
  • Pre-boiled Potatoes sliced into Hasselback potatoes
  • 1 Cup de-seeded cherries (canned or fresh)

 

Basting
  • 1/2 cup cherry jam
  • 1/4 cup of brandy
  • 1-2 Tbsp balsamic vinegar
  • 1 Tbsp soy sauce
  • 4-5 star anisé seeds
  • 2 crushed garlic cloves
  • Salt and pepper
  • Fresh Rosemary to serve

Method

Preheat the oven to 175 degrees Celsius.

Dress the Gammon with oil, mix the basting ingredients and add salt and pepper accordingly.

Brush the Gammon with the basting sauce and arrange the apples and Hasselback potatoes in your baking tray.

Bake the Gammon for 40-45 minutes and check to see if the Gammon is cooked through. Lower the heat to 160 degrees Celsius and cook for another 20 minutes. (The perfect cooking time for Gammon is 30 minutes for every 500g).

Serve the Gammon with fresh apple sliced, fresh cherries and rosemary and the crispy baked Hasselback potatoes.
