Curry pork jaffles

Jaffles have never been so tempting. These Curry Pork Jaffles are a quick dinnertime fix that's ready in just a few minutes. Perfect for using up leftover bread and pantry staples, these Curry Pork Jaffles are a wholesome and delicious meal on the go for weeknights and weekends.

Ingredients

  • 500g lean pork mince
  • Oil to fry
  • 1 small red onion diced
  • 1 tbsp crushed garlic cloves
  • 1 tbsp curry powder
  • 1/2 cup chutney
  • 1 cup peas, corn & carrot cooked
  • Bread of choice
  • Butter

Method

Add some oil to a hot pan, add the diced onion and spices, and fry until fragrant.

Add the pork mince and fry until brown.

Add the chutney and the vegetables and cook for a few minutes more.

Get your bread ready, butter the bread, and add 2-3 tbsp of the cooked pork mince. Add the top layer of bread and press into the jaffle pan

Slice off the access bread and place on a braai or over a gas stove top to brown for 2-3 minutes on each side.

Serve the Jaffles with extra chutney.
