This delicious stew can also be prepared in a pot on top of the stove and will have everyone asking for more
Heat oil in a heavy-based pan or pot and fry the pork pieces until light brown.
Add the onions and garlic halfway and fry until onions become soft.
Add the fruit juice & enough meat stock to cover the pork. Replace lid and simmer 40 – 45 minutes over low heat.
Add the potatoes, carrots and beans and simmer a further 20 – 25 minutes or until the veg is soft. Add a little stock to replenish the liquid from time to time.
When pork is tender, mix onion soup powder with 40 ml cold water into a paste. Add to the potjie and stir through until the gravy thickens.
Serve with crispy rolls, pap or bread.
Replace the brown onion soup powder with mushroom soup powder.
Replace the apple juice with chicken stock or rooibos tea.
Add one tin of drained tinned peas or beans to the dish right at the end and heat through before serving. This will increase the amount of servings.
